Pronounced "eye-luh", this is the greatest of the whisky islands: much of it deep with peat, lashed by winds, rains, and sea in the Inner Hebrides. Its single malts are known for their seaweedy, iodine like character. A dash of Islay malts gives that unmistakable tang of Scotland to many blended whiskies.
